Discard the ends of the lady fingers and make a slit lengthwise, making sure they are still one, with the end intact.
Dry them in the sun for one or two days.
In a pan heat the mustard oil.
Let it smoke and then cool for a few minutes.
Add the garlic and green chilli. Fry a few seconds.
Add the onions and turmeric powder.
Fry until onion is transparent.
Add the lady fingers and fry nicely until they are cooked.
Salt to taste.
Serve hot
